Delirious Wheat - Sabine KonhaeuserI have a dream. The dream of a wheat and gluten free world. Unfortunately this dream is not bound to become true anytime soon, if ever. The compromise I would be happy to settle with is a world where shopping and dining is hassle free. Meaning that I can find good selections of tasty wheat and gluten free food in every store and restaurant. To top it all off, that food would not be so overpriced. Yes, I have a dream.

Until part of this dream comes true the world needs people to bring the message of a gluten free life to the masses – spread the word.

I learned about my wheat and gluten intolerance in the beginning of 2006. The symptoms didn’t necessarily point to a food related cause. Yes, I did have problems with my digestive system, namely cramps in my belly, but I also had other symptoms that seemed rather unrelated at the time. Severe irregular heart beats, to the point that I could feel my heart rumbling around 24/7; a kind of “pulling” muscle pain in my arms and legs. I went to my family doctor, to a proctologist and to a heart specialist. All without any results. I still didn’t feel right.

At some point I started to write down what I was eating and how I felt thereafter. It didn’t take long to figure out that my belly problems were related to bread. From there it was a short way to pinpoint the discomfort and cramps to wheat. At that point I didn’t really think of gluten. I pretty much removed bread from my diet and felt much better. Not 100%, but 90%. Than I started to realize that I felt worse when I ate wheat free but gluten containing products like rye bread.

Later on I learned that all my symptoms, digestive problems, heart problems, muscle pain, and fatigue are related to wheat/gluten.

Although gluten does cause all the aforementioned symptoms, the reaction is not as severe as when I consume wheat containing products. I get away with tiny amounts of wheat and small amounts of gluten for one day. Wheat on the second day causes severe reactions, no matter how tiny the amount. Gluten alone will take a bit longer, and the reactions won’t be that strong. I may have heart problems, or muscle pain, rarely digestive discomfort. Better to avoid it all along. So I try to lead a wheat and gluten free life.

After I realized that wheat is off my food list I became very frustrated. Products were not readily available. If I found some I didn’t know if they taste good. The cost of these products is also not exactly low. I started to test different products and learned which ones are good, which ones better to avoid. At some point I thought about sharing my own experience with the world. This is where Delirious Wheat comes into play.
